Summary

pin pnpm@11.5.2 via packageManager; nixpacks defaults to pnpm 9, which reads pnpm-workspace.yaml as a workspace manifest and fails with packages field missing or empty
corepack (first-class in nixpacks) honors the pinned version
add start script (node ./dist/server/entry.mjs) since coolify runs pnpm start against the node standalone build

Test plan

pnpm build succeeds and emits dist/server/entry.mjs
redeploy on coolify: install step uses pnpm 11 and passes
